My thinking on the coin toss is that Crowley didn't cheat, but Aziraphale did. That's exactly the sort of thing a fussy control freak who knows his particular style of dominating is precisely what's called for would do. And Crowley's tempting skills are so deadly because he's honed them for millennia on himself.
