Aziraphale is very proud of his clever last-minute thinking. Even if everyone hates him now.
Also, I like to think of him being nostalgic--he only likes fruitcake because he remembers a time when it was actually special and the most delicious thing you could have (and more modern Christmas cookies hadn't existed yet)
